Beef Fried Rice

Embark on a culinary adventure with Sri Lankan Beef Fried Rice, a dish that celebrates the rich tapestry of flavors found in Sri Lankan cuisine. Tender strips of beef, marinated in a tantalizing blend of spices, take center stage in this fragrant creation. The beef is stir-fried to perfection alongside an assortment of vibrant vegetables, infusing the dish with a burst of colors and textures. Ingredients:

  • 2 cups cooked rice (preferably day-old)
  • 300 grams beef sirloin, thinly sliced
  • 2 eggs, beaten
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 1 bell pepper, diced
  • 1 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric powder
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish
  • Lime wedges for serving

instructions:

  1. Heat one tablespoon of vegetable oil in a large skillet or wok over medium heat.
  2. Add the beaten eggs to the skillet and scramble them until cooked through. Remove the
    scrambled eggs from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil and sauté the chopped onion
    and minced garlic until they become fragrant and translucent.
  4. Add the sliced beef sirloin to the skillet and stir-fry until the beef is cooked to your desired
    level of doneness.
  5. Add the diced carrot, bell pepper, and frozen peas to the skillet. Stir-fry for another 2-3
    minutes until the vegetables are slightly tender.
  6. Push the beef and vegetables to one side of the skillet and add the cooked rice to the other
    side. Break up any clumps of rice using a spatula.
  7. Drizzle soy sauce and oyster sauce over the rice. Sprinkle curry powder and turmeric
    powder evenly over the rice. Mix everything together until well combined.
  8. Return the scrambled eggs to the skillet and stir them into the rice mixture.
  9. Season with salt and pepper to taste. Continue to stir-fry for another 2-3 minutes to ensure
    the flavors are well incorporated and the rice is heated through.
  10. Remove the skillet from the heat and garnish the fried rice with fresh cilantro leaves.
  11. Serve the Sri Lankan Beef Fried Rice hot with lime wedges on the side.
