Chicken Curry

Ingredients:

  • 500 grams chicken, cut into pieces
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chili peppers, slit lengthwise (adjust to your preferred level of spiciness)
  • 2 tomatoes, finely chopped
  • 2 tablespoons vegetable oil
  • 1 tablespoon curry powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder (adjust to your preferred level of spiciness)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 cinnamon stick
  • 3-4 cardamom pods
  • 3-4 cloves
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
    Instructions:
  1. Heat vegetable oil in a large skillet or pot over medium heat. Add the chopped onion and
    sauté until it becomes translucent and golden brown.
  2. Add the minced garlic, grated ginger, and slit green chili peppers to the skillet. Sauté for
    another minute until the aromas are released.
  3. Add the chicken pieces to the skillet and cook until they are browned on all sides.
  4. Add the chopped tomatoes and cook until they soften and release their juices.
  5. Sprinkle curry powder, turmeric powder, chili powder, ground coriander, ground cumin,
    cinnamon stick, cardamom pods, cloves, and salt over the chicken mixture. Mix well to coat
    the chicken with the spices.
  6. Pour enough water to cover the chicken and bring the mixture to a boil. Reduce the heat to
    low, cover the skillet, and simmer for about 30-40 minutes or until the chicken is cooked
    through and tender. Stir occasionally and add more water if needed to maintain the desired
    consistency.
  7. Once the chicken is cooked, taste and adjust the seasoning if necessary.
  8. Remove from heat and garnish with fresh chopped coriander leaves.
  9. Serve the Sri Lankan Chicken Curry hot with rice, roti, or bread.
