Chicken Fried Rice

Prepare your taste buds for a flavorful journey with Sri Lankan Chicken Fried Rice, which combines the best of Sri Lankan cuisine and international influences. Fragrant basmati rice, cooked to perfection, serves as the foundation for succulent pieces of marinated chicken bursting with savory spices. The rice is stir-fried in a wok, mingling with an array of aromatic ingredients, including onions, garlic, ginger, and colorful vegetables. Ingredients:

  • 2 cups cooked rice (preferably day-old)
  • 2 chicken breasts, boneless and skinless, cut into small cubes
  • 2 eggs, beaten
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 1 bell pepper, diced
  • 1 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric powder
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish
  • Lime wedges for serving
    Instructions:
  1. Heat one tablespoon of vegetable oil in a large skillet or wok over medium heat.
  2. Add the beaten eggs to the skillet and scramble until cooked. Remove the scrambled eggs
    from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil and sauté the chopped onion
    and minced garlic until they become fragrant and translucent.
  4. Add the diced chicken breast to the skillet and stir-fry until the chicken is cooked through
    and no longer pink.
  5. Add the diced carrot, bell pepper, and frozen peas to the skillet. Stir-fry for another 2-3
    minutes until the vegetables are slightly tender.
  6. Push the chicken and vegetables to one side of the skillet and add the cooked rice to the
    other side. Break up any clumps of rice using a spatula.
  7. Drizzle soy sauce and oyster sauce over the rice. Sprinkle curry powder and turmeric
    powder evenly over the rice. Mix everything together until well combined.
  8. Return the scrambled eggs to the skillet and stir them into the rice mixture.
  9. Season with salt and pepper to taste. Continue to stir-fry for another 2-3 minutes to ensure
    the flavors are well incorporated and the rice is heated through.
  10. Remove the skillet from the heat and garnish the fried rice with fresh cilantro leaves.
  11. Serve the Sri Lankan Chicken Fried Rice hot with lime wedges on the side.
