Lamb Fried Rice

This is a gastronomic journey with Sri Lankan Lamb Fried Rice, a dish that showcases the vibrant flavors of Sri Lankan cuisine in a unique way. Succulent pieces of tender lamb, marinated in a medley of exotic spices, take center stage in this mouthwatering creation. Ingredients:

  • 2 cups cooked rice (preferably day-old)
  • 500 grams of lamb meat, boneless and diced
  • 2 eggs, beaten
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 carrot, diced
  • 1 bell pepper, diced
  • 1 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon tomato sauce
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to your preferred level of spiciness)
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh coriander leaves, for garnish
  • Lime wedges for serving
    Instructions:
  1. Heat one tablespoon of vegetable oil in a large skillet or wok over medium heat.
  2. Add the beaten eggs to the skillet and scramble them until cooked through. Remove the
    scrambled eggs from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil and sauté the chopped onion,
    minced garlic, and grated ginger until they become fragrant and golden brown.
  4. Add the diced lamb meat to the skillet and stir-fry until it is browned and cooked through.
  5. Add the diced carrot, bell pepper, and frozen peas to the skillet. Stir-fry for another 2-3
    minutes until the vegetables are slightly tender.
  6. Push the lamb and vegetables to one side of the skillet and add the cooked rice to the
    other side. Break up any clumps of rice using a spatula.
  7. Drizzle soy sauce, oyster sauce, and tomato sauce over the rice. Sprinkle curry powder,
    turmeric powder, and red chili powder evenly over the rice. Mix everything together until well
    combined.
  8. Return the scrambled eggs to the skillet and stir them into the rice mixture.
  9. Season with salt and pepper to taste. Continue to stir-fry for another 2-3 minutes to ensure
    the flavors are well incorporated and the rice is heated through.
  10. Remove the skillet from the heat and garnish the fried rice with fresh coriander leaves.
  11. Serve the Sri Lankan Spicy Lamb Fried Rice hot with lime wedges on the side.
