Lamb Kottu | ලැම්බ් කොත්තු

Indulge in a tantalizing fusion of flavors with Sri Lankan Lamb Kottu, a culinary masterpiece that combines the succulence of lamb with the vibrant spices of Sri Lankan cuisine. Finely chopped roti is stir-fried with tender pieces of marinated lamb, creating a symphony of textures and tastes. As the lamb sizzles on the griddle, it absorbs the aromatic spices, infusing every morsel with a delightful burst of flavor. Mixed with a colorful array of vegetables, this dish presents a harmonious balance of heat, tenderness, and crunch. Sri Lankan Lamb Kottu is an extraordinary culinary adventure that will leave you craving for more.

Ingredients:

  • 4 roti or paratha bread, cut into small pieces
  • 500 grams lamb meat, boneless and thinly sliced
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 2 green chili peppers, thinly sliced
  • 1 carrot, grated
  • 1 bell pepper, thinly sliced
  • 1/2 cup cabbage, thinly sliced
  • 1/2 cup leeks, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder (adjust to your preferred level of spiciness)
  • 2 tablespoons soy sauce
  • 1 tablespoon ketchup
  • Salt to taste
  • Fresh coriander leaves, for garnish
  • Lime wedges, for serving
    Instructions:
  1. Heat one tablespoon of vegetable oil in a large skillet or wok over medium heat.
  2. Add the sliced lamb meat to the skillet and cook until it is browned and cooked through.
    Remove the cooked lamb from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil and sauté the chopped onion,
    minced garlic, and sliced green chili peppers until they become fragrant and golden brown.
  4. Push the onion mixture to one side of the skillet and crack the eggs into the other side.
    Scramble the eggs until they are fully cooked.
  5. Add the grated carrot, sliced bell pepper, cabbage, and leeks to the skillet. Stir-fry for
    another 2-3 minutes until the vegetables are slightly tender.
  6. Return the cooked lamb to the skillet. Mix everything together until well combined.
  7. Add the curry powder, turmeric powder, and chili powder to the skillet. Mix well to coat the
    lamb, vegetables, and eggs with the spices.
  8. Add the roti or paratha bread pieces to the skillet. Using two spatulas, chop and mix
    everything together, breaking down the bread into smaller pieces. Continue stir-frying for a
    few more minutes until the bread is well incorporated and heated through.
  9. Drizzle soy sauce and ketchup over the mixture. Stir-fry for another 2-3 minutes to ensure
    the flavors are well incorporated.
  10. Season with salt to taste. Adjust the seasoning and spiciness according to your preference.
  11. Remove the skillet from the heat and garnish the Spicy Lamb Kottu with fresh coriander
    leaves.
  12. Serve the Sri Lankan Spicy Lamb Kottu hot with lime wedges on the side.
