Discover a delectable Sri Lankan delight with our Sri Lankan Rolls. These delectable treats feature a golden, crispy outer layer enveloping a savory filling of spiced potatoes, vegetables, and sometimes minced chicken or beef. The filling is prepared by sautéing a medley of onions, garlic, and aromatic spices, creating a fragrant mixture that infuses each bite. The filling is then encased in a thin pastry wrapper, carefully rolled, and sealed before being deep-fried to perfection. The result is a heavenly combination of crispy texture and flavorful goodness, that will transport your taste buds to the vibrant streets of Sri Lanka.

Ingredients:
For the Filling:

  • 200 grams chicken, cooked and shredded
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 bell pepper, finely chopped
  • 1/2 cup cabbage, finely shredded
  • 2 tablespoons vegetable oil
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder (adjust to your preferred level of spiciness)
  • Salt to taste
  • Fresh coriander leaves, chopped (optional)
    For the Dough:
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • Water, as needed
    For Frying:
  • Vegetable oil, for deep frying
    For the Batter:
  • 1 cup all-purpose flour
  • 1 cup water
  • Salt to taste
    Instructions:
  1. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and
    minced garlic. Sauté until the onions become translucent and the garlic is fragrant.
  2. Add the grated carrot, chopped bell pepper, and shredded cabbage to the skillet. Stir-fry for
    a few minutes until the vegetables are slightly tender.
  3. Sprinkle curry powder, turmeric powder, chili powder, and salt over the vegetables. Mix well
    to coat the vegetables with the spices.
  4. Add the shredded chicken to the skillet and stir-fry for a few more minutes until everything
    is well combined and heated through. Remove from heat and set aside to cool.
  5. In a mixing bowl, combine the all-purpose flour and salt for the dough. Gradually add water
    while kneading until a smooth and elastic dough forms. Cover the dough and let it rest for
    about 30 minutes.
  6. Divide the dough into small balls and roll each ball into a thin, round wrapper.
  7. Place a spoonful of the cooled filling onto one side of the wrapper. Optionally, sprinkle
    some chopped fresh coriander leaves over the filling for added flavor.
  8. Fold the wrapper over the filling to form a roll, tucking in the sides and sealing the edges
    with a bit of water. Repeat with the remaining dough and filling.
  9. Heat vegetable oil in a deep frying pan or pot for deep frying.
  10. In a separate bowl, prepare the batter by mixing all-purpose flour, water, and salt to form a
    smooth and thick batter.
  11. Dip each roll into the batter, ensuring it is fully coated, and carefully place it into the hot oil.
    Fry the rolls in batches until they turn golden brown and crispy.
  12. Remove the rolls from the oil using a slotted spoon and place them on a paper towel-lined
    plate to drain excess oil.
  13. Serve the Sri Lankan Rolls hot as a snack or appetizer. They can be enjoyed on their own or
    with a dipping sauce of your choice.
