Ingredients:
For the Dough:

  • 3 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 teaspoons instant yeast
  • 1/4 cup unsalted butter, melted
  • 1 cup lukewarm milk
    For the Seeni Sambol Filling:
  • 2 large onions, finely chopped
  • 3 tablespoons vegetable oil
  • 2 tablespoons tamarind paste
  • 2 tablespoons sugar
  • 1 teaspoon chili powder (adjust to your preferred level of spiciness)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • Salt to taste
    For Assembling and Baking:
  • All-purpose flour, for dusting
  • 1 egg, beaten (for egg wash)
    Instructions:
  1. In a large mixing bowl, combine the all-purpose flour, sugar, salt, and instant yeast for the
    dough. Mix well.
  2. Make a well in the center and pour in the melted butter and lukewarm milk. Mix until a soft
    dough forms.
  3. Transfer the dough to a floured surface and knead for about 10 minutes until it becomes
    smooth and elastic. Place the dough in a greased bowl, cover it with a kitchen towel, and let it
    rise in a warm place for about 1 hour or until doubled in size.
  4. While the dough is rising, prepare the Seeni Sambol filling. Heat vegetable oil in a skillet
    over medium heat. Add the chopped onions and sauté until they turn golden brown and
    caramelized.
  5. Reduce the heat to low and add the tamarind paste, sugar, chili powder, ground cinnamon,
    ground cloves, and salt to the caramelized onions. Mix well and let it cook for another 5
    minutes. Remove from heat and set aside to cool.
  6. Once the dough has doubled in size, punch it down and divide it into equal portions. Roll
    each portion into a small circle.
  7. Place a spoonful of the cooled Seeni Sambol filling onto one side of each dough circle.
  8. Fold the dough over the filling to form a half-moon shape. Use your fingers or a fork to
    press and seal the edges of the buns.
  9. Place the assembled buns onto a greased baking tray, leaving some space between them
    for rising. Cover the tray with a kitchen towel and let the buns rise for another 30-45 minutes.

  11. Once the buns have risen, brush the tops with beaten egg for a shiny finish.
