Ingredients:
- 2 cups cooked basmati rice (preferably day-old)
- 200 grams of chicken breast, boneless and diced
- 200 grams of shrimp, peeled and deveined
- 3 eggs, beaten
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 red chili pepper, thinly sliced
- 1 carrot, diced
- 1 bell pepper, diced
- 1 cup frozen peas
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon tomato ketchup
- 1 teaspoon curry powder
- 1/2 teaspoon turmeric powder
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Fresh coriander leaves, for garnish
- Lime wedges for serving
Instructions:
- Heat one tablespoon of vegetable oil in a large skillet or wok over medium heat.
- Add the beaten eggs to the skillet and scramble them until cooked through. Remove the
scrambled eggs from the skillet and set aside. - In the same skillet, add another tablespoon of vegetable oil and sauté the chopped onion,
minced garlic, and sliced chili pepper until they become fragrant and golden brown. - Add the diced chicken breast and shrimp to the skillet. Stir-fry until the chicken is cooked
through and the shrimp turns pink. - Add the diced carrot, bell pepper, and frozen peas to the skillet. Stir-fry for another 2-3
minutes until the vegetables are slightly tender. - Push the chicken, shrimp, and vegetables to one side of the skillet and add the cooked rice
to the other side. Break up any clumps of rice using a spatula. - Drizzle soy sauce, oyster sauce, and tomato ketchup over the rice. Sprinkle curry powder
and turmeric powder evenly over the rice. Mix everything together until well combined. - Return the scrambled eggs to the skillet and stir them into the rice mixture.
- Season with salt and pepper to taste. Continue to stir-fry for another 2-3 minutes to ensure
the flavors are well incorporated and the rice is heated through. - Remove the skillet from the heat and garnish the Nasi Goreng with fresh coriander leaves.
- Serve the Sri Lankan Nasi Goreng hot with lime wedges on the side.
