Egg Kottu | බිත්තර කොත්තු

Experience a delightful twist on a classic street food favorite with Sri Lankan Egg Kottu. This popular dish combines finely chopped roti, stir-fried with various vegetables, aromatic spices, and perfectly cooked eggs. Ingredients:

  • 4 roti or paratha bread, cut into small pieces
  • 4 eggs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 green chili pepper, thinly sliced
  • 1 carrot, grated
  • 1 bell pepper, thinly sliced
  • 1/2 cup cabbage, thinly sliced
  • 1/2 cup leeks, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder (adjust to your preferred level of spiciness)
  • 1 tablespoon soy sauce
  • 1 tablespoon ketchup
  • Salt to taste
  • Fresh coriander leaves, for garnish
  • Lime wedges, for serving
    Instructions:
  1. Heat one tablespoon of vegetable oil in a large skillet or wok over medium heat.
  2. Add the roti or paratha bread pieces to the skillet and stir-fry for a few minutes until they
    are crispy. Remove the bread pieces from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil and sauté the chopped onion,
    minced garlic, and sliced green chili pepper until they become fragrant and golden brown.
  4. Push the onion mixture to one side of the skillet and crack the eggs into the other side.
    Scramble the eggs until they are fully cooked.
  5. Add the grated carrot, sliced bell pepper, cabbage, and leeks to the skillet. Stir-fry for
    another 2-3 minutes until the vegetables are slightly tender.
  6. Add the curry powder, turmeric powder, and chili powder to the skillet. Mix well to coat the
    vegetables and eggs with the spices.
  7. Return the crispy bread pieces to the skillet. Mix everything together until well combined.
  8. Drizzle soy sauce and ketchup over the mixture. Stir-fry for another 2-3 minutes to ensure
    the flavors are well incorporated.
  9. Season with salt to taste. Adjust the seasoning and spiciness according to your preference.
  10. Remove the skillet from the heat and garnish the Egg Kottu with fresh coriander leaves.
  11. Serve the Sri Lankan Egg Kottu hot with lime wedges on the side.
