Chicken Roti | මස්රොටි

Ingredients:
For the Chicken Filling:

  • 500 grams boneless chicken, cut into small pieces
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili pepper, finely chopped (adjust to your preferred level of spiciness)
  • 1 tomato, finely chopped
  • 2 tablespoons vegetable oil
  • 1 tablespoon curry powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder (adjust to your preferred level of spiciness)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt to taste
  • Fresh coriander leaves, chopped
    For the Roti Dough:
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable oil
  • Water, as needed
    Instructions:
  1. In a skillet or frying pan, heat vegetable oil over medium heat. Add the chopped onion,
    minced garlic, grated ginger, and green chili pepper. Sauté until the onions become
    translucent and fragrant.
  2. Add the chicken pieces to the skillet and cook until they are no longer pink. Stir
    occasionally to ensure even cooking.
  3. Add the chopped tomato and cook for a few minutes until it softens and releases its juices.
  4. Sprinkle curry powder, turmeric powder, chili powder, ground cumin, ground coriander,
    and salt over the chicken mixture. Mix well to coat the chicken with the spices. Cook for
    another 5-7 minutes until the flavors meld together and the chicken is cooked through.
  5. Remove from heat and garnish with fresh chopped coriander leaves. Set aside.
    For the Roti Dough:
  6. In a large mixing bowl, combine the all-purpose flour and salt. Add the vegetable oil and
    mix well.
  7. Gradually add water while kneading until a soft and pliable dough forms. Knead for a few
    minutes until the dough is smooth. Cover with a kitchen towel and let it rest for 15-20
    minutes.
    Assembling and Cooking the Chicken Roti:
  8. Divide the rested dough into equal-sized balls. On a floured surface, roll out each ball into a
    thin round roti.
  9. Place a spoonful of the chicken filling onto one half of the roti. Fold the other half over the
    filling to form a half-moon shape. Press the edges to seal the roti.
  10. Heat a griddle or large non-stick pan over medium-high heat. Cook the filled roti on the
    griddle or pan for a couple of minutes on each side, pressing gently with a spatula, until it
    turns golden brown and crispy.
  11. Repeat the process with the remaining dough and filling to make more Sri Lankan Chicken
    Roti.
