Dhal Curry

Ingredients:

  • 1 cup red lentils (masoor dhal), rinsed
  • 3 cups water
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chili peppers, slit lengthwise (adjust to your preferred level of spiciness)
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder (adjust to your preferred level of spiciness)
  • 1 tomato, finely chopped
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
  • Lime wedges, for serving
    Instructions:
  1. In a saucepan, combine the rinsed lentils and water. Bring to a boil over medium heat, then
    reduce the heat to low and simmer for about 20 minutes or until the lentils are tender and
    cooked through. Set aside.
  2. In a separate large skillet or pan, heat vegetable oil over medium heat. Add the chopped
    onion and sauté until it becomes translucent and golden brown.
  3. Add the minced garlic, grated ginger, and slit green chili peppers to the skillet. Sauté for
    another minute until the aromas are released.
  4. Add the mustard seeds and cumin seeds to the skillet. Stir and cook until they begin to
    splutter and release their flavors.
  5. Sprinkle turmeric powder and chili powder over the onion mixture. Mix well to coat the
    onions and spices.
  6. Add the chopped tomato to the skillet and cook for a few minutes until it softens and
    combines with the spices.
  7. Pour the cooked lentils into the skillet, including any remaining cooking liquid. Stir well to
    combine all the ingredients.
  8. Season with salt to taste and simmer the dhal curry for another 5-10 minutes, allowing the
    flavors to meld together.
  9. Remove from heat and garnish with fresh chopped coriander leaves.
  10. Serve the Sri Lankan Dhal Curry hot as a comforting and nourishing dish, accompanied by
    rice or bread. Squeeze fresh lime juice over the dhal just before serving for a burst of
    tanginess.
