Tempered Potato

Ingredients:

  • 4 medium-sized potatoes, peeled and cubed
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 2 green chili peppers, slit lengthwise (adjust to your preferred level of spiciness)
  • 1 sprig curry leaves
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon chili powder (adjust to your preferred level of spiciness)
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
    Instructions:
  1. In a pot, boil the cubed potatoes in salted water until they are just tender. Drain the
    potatoes and set them aside.
  2. Heat vegetable oil in a large skillet or pan over medium heat. Add the sliced onion and
    sauté until it turns golden brown and caramelized.
  3. Add the slit green chili peppers, curry leaves, mustard seeds, and cumin seeds to the skillet.
    Stir and cook until the mustard seeds begin to splutter and release their flavors.
  4. Sprinkle turmeric powder and chili powder over the onion mixture. Mix well to coat the
    onions and spices.
  5. Add the boiled potatoes to the skillet and toss gently to coat them with the spice mixture.
    Stir gently to avoid breaking the potatoes.
  6. Season with salt to taste and continue cooking for another 5-7 minutes, allowing the flavors
    to meld together and the potatoes to absorb the spices.
  7. Remove from heat and garnish with fresh chopped coriander leaves.
