String Hoppers

Ingredients:
For the String Hoppers:

  • 2 cups rice flour
  • 1 cup water (adjust as needed)
  • 1/2 teaspoon salt
    For the Coconut Sambol:
  • 1 cup freshly grated coconut
  • 1 small onion, finely chopped
  • 2 green chili peppers, finely chopped
  • 1/2 teaspoon chili powder (adjust to your preferred level of spiciness)
  • 1/2 teaspoon salt
  • Juice of 1 lime
    For the Dhal Curry:
  • 1 cup red lentils (masoor dhal), rinsed
  • 3 cups water
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chili peppers, slit lengthwise (adjust to your preferred level of spiciness)
  • 2 tablespoons vegetable oil
  • 1 tablespoon curry powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder (adjust to your preferred level of spiciness)
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
    Instructions:
    For the String Hoppers:
  1. In a mixing bowl, combine the rice flour and salt. Gradually add water while stirring until a
    soft, pliable dough forms.
  2. Knead the dough for a few minutes until it is smooth and elastic. Cover the dough with a
    damp cloth and let it rest for about 15 minutes.
  3. Meanwhile, prepare a string hopper press or an idiyappam maker with the required
    attachments.
  4. Take a portion of the dough and fill the string hopper press. Press the dough onto a string
    hopper mat or directly onto lightly greased plates, forming thin, circular noodles.
  5. Steam the string hoppers in a steamer for about 5-7 minutes or until they are cooked and
    firm. Repeat the process with the remaining dough.
    For the Coconut Sambol:
  6. In a bowl, combine the freshly grated coconut, finely chopped onion, finely chopped green
    chili peppers, chili powder, salt, and lime juice. Mix well until all the ingredients are evenly
    distributed.
    For the Dhal Curry:
  7. In a saucepan, combine the rinsed lentils and water. Bring to a boil over medium heat, then
    reduce the heat to low and simmer for about 20 minutes or until the lentils are tender and
    cooked through. Set aside.
  8. In a separate large skillet or pan, heat vegetable oil over medium heat. Add the chopped
    onion and sauté until it becomes translucent and golden brown.
  9. Add the minced garlic, grated ginger, and slit green chili peppers to the skillet. Sauté for
    another minute until the aromas are released.
  10. Sprinkle curry powder, turmeric powder, and chili powder over the onion
    mixture. Mix well to coat the onions and spices.
  11. Add the cooked lentils to the skillet, including any remaining cooking liquid. Stir well to
    combine all the ingredients.
  12. Season with salt to taste and simmer the dhal curry for another 5-10 minutes, allowing the
    flavors to meld together.
  13. Remove from heat and garnish with fresh chopped coriander leaves.
    To Serve:
  14. Arrange a portion of string hoppers on a plate or banana leaf. Serve alongside the coconut
