Seafood Fried Rice

Indulge in the tantalizing flavors of Sri Lankan Seafood Fried Rice. This dish embodies the coastal bounty of Sri Lanka, where fresh seafood takes center stage. Fragrant basmati rice serves as the canvas for a harmonious blend of succulent prawns, tender fish, and aromatic spices. Infusing Sri Lankan spices such as turmeric, cumin, coriander, and chili adds depth and a subtle kick to each bite. With the addition of vibrant vegetables and the skillful use of herbs, this dish becomes a symphony of flavors that captures the essence of Sri Lankan cuisine. Ingredients:

  • 2 cups cooked rice (preferably day-old)
  • 200 grams of shrimp, peeled and deveined
  • 200 grams of squid, cleaned and sliced into rings
  • 200 grams of fish fillets (such as tilapia or snapper), cut into small pieces
  • 2 eggs, beaten
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 small carrot, diced
  • 1 bell pepper, diced
  • 1 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric powder
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro leaves, for garnish
  • Lime wedges, for serving

Instructions:

  1. Heat one tablespoon of vegetable oil in a large skillet or wok over medium heat.
  2. Add the beaten eggs to the skillet and scramble them until cooked through. Remove the scrambled eggs from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil and sauté the chopped onion and minced garlic until they become fragrant and translucent.
  4. Add the shrimp, squid, and fish fillets to the skillet. Stir-fry for a few minutes until the seafood is cooked through.
  5. Add the diced carrot, bell pepper, and frozen peas to the skillet. Stir-fry for another 2-3 minutes until the vegetables are slightly tender.
  6. Push the seafood and vegetables to one side of the skillet and add the cooked rice to the other side. Break up any clumps of rice using a spatula.
  7. Drizzle soy sauce, fish sauce, and oyster sauce over the rice. Sprinkle curry powder and turmeric powder evenly over the rice. Mix everything together until well combined.
  8. Return the scrambled eggs to the skillet and stir them into the rice mixture.
  9. Season with salt and pepper to taste. Continue to stir-fry for another 2-3 minutes to ensure the flavors are well incorporated and the rice is heated through.
  10. Remove the skillet from the heat and garnish the fried rice with fresh cilantro leaves.
  11. Serve the Sri Lankan Seafood Fried Rice hot with lime wedges on the side.
